TATER TOT CASSEROLE AND SLOPPY JOE
It’s Manwich Monday Recipes time again! I don’t always remember to follow a weekly menu plan like Taco Tuesday and Manwich Monday. But my kids enjoy it so much I make it as often as possible. They also like the mess of eating sloppy Joe with both their hands. Who doesn’t enjoy making a mess on their face at dinner?

I had some Manwich in the pantry, so it was time to be creative again with dinner. A casserole is a good way to add a little variety to my Manwich. There are many options when creating a meal using Manwich, as it contains no meat. You can use it as pasta, make sandwiches, or casseroles.
I was looking for something simple and quick, so I chose a Tater Tot Casserole. It’s the perfect pairing with tater-tots, especially with the sweet and tangy sauce.
Today, I will show you how to make Tater Tots and Sloppy Joes Casserole so that your family can enjoy this dish for Manwich Sunday and still have plenty of time to spend together before and after the meal.
Gather all your ingredients. The measurements can be found at the end of this post. You will need ground beef (three flavors are available: Bold, Original, and Thick and Chunky), Manwich, green onions, sweet onion, green bell pepper, shredded cheddar, corn, black bean, and tater-tots.
Add the green pepper and onions to the hamburger, and cook until the vegetables become soft.
Add this base mixture to the bottom 9×13 baking dish. You could make this in an 8×8 dish, although I haven’t done it. The test was made in a 9×13 dish, so I may not be aware of any time or cooking adjustments.
Tater Tot and Sloppy Joe Casserole
Ingredients
- 1 lb of ground beef
- One can Manwich
- 1 cup diced sweet yellow onion
- 1/2 cup green pepper, diced
- 1 cup rinsed black beans
- Half a cup of corn
- 1 cup of shredded cheese
- 16oz to 32oz bag tater tots (your preference)
- Green onions as a garnish
Steps
- Preheat oven to 350 degrees Fahrenheit.
- In a large skillet, brown hamburger, green pepper, and onions. Stir in Manwich, and heat until heated. Add the black beans and corn, and continue to cook until heated.
- Add Manwich to a 9×13-inch baking dish. Top with shredded cheese. Add a final layer of tater-tots. You can use 16oz or 32oz tatertots, depending on the family’s preferences.
- Bake for 40 minutes or until the tater-tots are crispy and golden.
- Enjoy! Remove from the oven and allow it to cool a little.
